Pasta salad!  Why I have never thought of making this before I will never know, but it was delicious.

I made this yesterday afternoon and let it sit and marinate until dinner and it was even better for lunch today.  The only complaint I have is that it is really light and doesn’t make a great MEAL, I was hungry again about an hour later.  So this is definitely a side dish or a snack, but it is delicious and it is super easy to make!

Easy Pasta Salad

Ingredients:

  • Quinoa Pasta (or pasta of choice) — about 2 cups before it’s cooked.
  • 1 Large Cucumber – Diced
  • 2 Medium Carrots – Diced
  • 1 Celery Stalk – Chopped
  • 1 15oz. Can of Garbanzo Beans (I removed the skins)
  • Annie’s Natural Tuscan Italian Dressing (to taste).
  • Optional Ingredients:  Bell peppers, Olives and/or Hummus (for a creamier pasta salad with a bit more staying power).

Directions:

Toss ingredients into a bowl and mix well with dressing.  Let marinate in the fridge for at least 2 hours before serving.  Easy.
