Vegan Caesar Pasta Salad

Dinner tonight was one for the books.

Absolutely delish!  I used gluten free pasta and served this warm (gluten free pasta isn’t very good cold) but I imagine this would be equally amazing served cold (with regular or whole wheat pasta).

Vegan Caesar Pasta Salad

Vegan Caesar Dressing (Makes about 8 oz.) Adapted from Crazy Sexy Diet

Ingredients:

        • 1 Cup Vegenaise
        • 2 tsp. Dijon Mustard
        • 1 clove garlic (minced)
        • 1 T water
        • 1 1/2   tsp lemon juice
        • 1 T Safflower Oil (Olive Oil would work too, I was out)
        • 2 tsp Nutritional Yeast
        • Salt and Pepper to taste.

Combine ingredients in a blender or food processor and process until well blended, adjust seasoning to taste.  Place in a mason jar for storage.

Pasta Salad

Ingredients:

  • ~2.5 Cups (dry) Pasta of choice (I used Gluten Free Brown Rice Pasta)
  • 1 Can Red Beans
  • 1 Cup Artichoke Quarters
  • 4 Cups Spinach
  • 1/2 Cup Kalmata Olives, halved.

Prepare pasta according to directions.

Sautee artichoke quarters and spinach until wilted.  If you want this served hot heat up the beans, otherwise combine all ingredients with pasta.  Add Vegan Caesar Dressing to taste (I used about 1/4 cup and had around 3 LARGE servings of pasta salad) and mix well.  Plate and serve!

If serving cold place in refrigerator for at least an hour then serve.

You could add any vegetables you wanted to this, I imagine asparagus would taste awesome as well.  Served warm the dressing tasted a bit like a light alfredo sauce, I think served cold the flavors would be more present.
